Chicken with Figs

INGREDIENTS

Chicken …………….. 6-8pieces
Fresh figs ………….. 1lb
Juice of lemon …….. 1large
Salt and Pepper …… to taste
Fresh parsley ……… 2 tbsp
Brown sugar ………. 100g
Vinegar ……………. 100ml
Dry white wine …… 100ml

PREPARATION

Place the juice of the lemon in a large bowl with the sugar, chicken and wine. Set aside for a minimum of 1 hour, preferably overnight.Place the figs, marinated chicken and parsley in a baking dish and bake in a preheated oven at 200c for 45 min, or until the chicken is cooked. Serve with cous cous or rice.
