Chinese Omelet

INGREDIENTS

2 eggs
1 capsicum
1 tbsp soya sauce
1 tsp black pepper
Green onions, chopped
Salt to taste
Oil for frying

PREPARATION

Beat eggs and add salt, pepper, soya sauce, green onions and capsicum.
Heat oil in a frying-pan, add the egg mixture and cook slowly.
As the omelette cooks, turn over to cook the other side. Fold and serve hot.
