Cream Puffs

Water…………………………………..1 cup

PREPARATION

Put water, butter and salt in a sauce pan. Heat to boiling.
Add flour all at once.
Stir vigorously until a ball, in the centre of the pan is formed.
Remove from heat, let it cool and add eggs, one at a time, beat vigorously after each addition.
Bake balls of the choux pastry on a well greased pan.
Leave 2” between puffs to allow spreading.
Bake in a very hot oven (425oF) for 20 minutes.
Reduce heat to 350oF and bake for another 20 minutes.
Cool and fill with cream (cream beaten and sugar added in it).

Cornmeal Rolls

Yellow cornmeal .. 1/3 cup
Sugar ……………. 1/2 cup
Milk ……………… 2 cup
Butter ………….. 1/2 cup
Water …………… 1/4 cup
Yeast …………… 1 tbsp
Flour …………….. 5 cups
Eggs …………….. 2 nos

PREPARATION

Pre-heat oven to 375° F. In a large saucepan, mix together cornmeal, sugar salt, milk and butter. Boil until thickened, about 5 minutes. Remove from heat and continue stirring for a few minutes. Cool mixture to lukewarm. Dissolve yeast in warm water according to general breadmaking instructions. While yeast is developing, add the eggs and vanilla to cornmeal mixture. Add yeast then flour. Knead well and put in a greased bowl. Cover and let rise until doubled. Punch down and divide into the desired number of portions. Form round rolls and place on greased baking sheet. Cover and let rise until doubled again. Bake for 15 - 20 minutes or until golden brown.

Chocolate Chip and Banana Muffin

1 ea. large egg.
1 ½ cups of flour.
¾ cup of milk.
1 oz. chocolate sauce
1 tablespoon sugar
¾ cup of chocolate chips.
½ cup of brown sugar.
½ cup of puréed banana.
¼ cup of canola oil.
3 teaspoons of baking powder.
½ teaspoon of kosher salt.
½ teaspoon of cinnamon.
¼ teaspoon of nutmeg.

Blend all of the ingredients together thoroughly. Pour the mixture into greased muffin tins, about two-thirds full, Bake at 375 for approximately 17 minutes

Brownies

Coco powder……………………2 tbsp.

Walnuts (grated)……………….1/2 cup

PREPARATION

Mix ghee/butter and sugar thoroughly for about 10 to 15 minutes.
Add eggs and mix for 10 minutes.
Now add flour, baking powder and coco powder and mix well and mix wall nuts.
Add I tbsp of oil in the mixture and mix well.
Grease the pan and pour it in the pan, bake it for 45 minutes at 180oC.
When baked cut it into square pieces.

Preheat a grill for high heat. When the grill is hot, roast the jalapeno peppers until blackened on all sides. Place in a plastic bag to sweat and loosen the blackened skin. Rub the skin off, then seed if desired, and chop.
In a large bowl, use your hands to mix together the ground beef, salt, pepper, egg, steak sauce, onion, hot pepper sauce, oregano, Worcestershire sauce, garlic salt and Fritos®. Divide into 8 balls, and flatten into patties.
Grill patties for 10 to 15 minutes, turning once, or until well done. I always drink one beer, then flip, drink another beer, then remove from the grill and place on buns. Top each one with a slice of pepperjack cheese and pig out!

Stir together flour, sugar, baking powder, baking soda, and salt. Make a well in the center of the dry ingredients. In another bowl, whisk the egg and then whisk in the buttermilk, vanilla, and melted butter. Pour mixture all at once into dry ingredients. Quickly stir to partially blend. Add blueberries. Carefully fold together to moisten. The batter will be thick and lumpy. Spoon batter into 12 paper-lined muffin tins. The cups will be full. Sprinkle the tops with the 1 tablespoon sugar. Bake 25-30 minutes. When done, the tops will spring back when lightly touched. Let cool in the pan for 5 minutes and then carefully remove and cool on a rack.

Black Pudding Hash

Peel the potato, dice and cooking a pan of salted boiling water until tender.Dice the black pudding and fry in a fan for 3-4 minutes until it begins to go crispy and crumble.Drain the potatoes, add to the black pudding and continue to fry for 2-3 minutes. Season. Put on a plate and garnish with chopped parsley.

Banana Cream Mousse

Process or blend bananas, sugar and brandy until smooth.
Dissolve gelatine in water over simmering water. add to bananas, blend until combined.
Beat cream until firm peaks form, fold through bananas, spoon into 4 dishes.
Refrigerate 1 hour or untill set.
Decorate with extra whipped cream and chopped walnuts, if desired.

Baking Powder Biscuits

Shortening ……….. 6 tbsp
Milk ……………….. 1 cup

PREPARATION

Sift flour, measure, and sift with baking powder and salt. Cut in shortening with 2 spatulas. Add milk. Turn onto lightly floured board. Knead lightly and pat into sheet 1/2 inch thick. Cut with floured cutter. Bake in hot oven (450 F) 12 minutes.

Baked Kajun Fish

Margarine or butter, melted …3/4 cup
Lemon juice …………….1/2 cup

PREPARATION

Mix seasonings in a small bowl. Place in a spice shaker.
Place 25 fish portions into each un greased 12″x20″x2-1/2″ steam table pan.
Sprinkle 1/4 cup of lemon juice and 3 tablespoons plus 1 teaspoon of seasoning mix over the top of each pan.
Drizzle 3/8 cup of melted margarine over the seasonings.
To Bake: Conventional Oven 350 degrees for 20 minutes; convection oven 350 degrees for 15 minutes.Until fish flakes easily with a fork.
